PAN FRIED SEABASS WITH SPRING ONIONS & GINGER
1 fillet of seabass, skin removed
Flour for dusting the fish
1/4 of a fresh chilli
2 Tablespoons of olive oil
1 Tablespoon of sesame oil
3 tablespoons of rice vinegar
3 tablespoons of light soy sauce
3 tablespoons of mirin
1/4 cup of white wine
1/4 cup of saki rice
1 tablespoon of tomatoe puree
salt & pepper
4 spring onions finely sliced
6gr of ginger
place oil in pan and lightly fry the onions,
chilli & ginger.After 1 minute add wine and reduce,
then add mirin, vinegar, soy and puree
simmer and season.
Pan fry the seabass for one & half minutes on both sides.
place the fillet on a plate and the salsa sauce on top.
